Papadaki Evgenia
Dr. Evgenia Papadaki earned her Bachelor of Science (BSc) degree from the Department of Chemistry at the University of Ioannina, receiving awards of excellence as the top-ranking graduating student from the State Scholarships Foundation – IKY (National Erasmus+ Agency). She continued her studies at the same university, earning with highest honors a Master of Science (MSc) in Chemistry, specializing in “Food Science and Technology.” Her deep interest in research motivated her to obtain with highest honors a Doctorate (PhD) in the emerging field of “Biotechnology” from the Department of Chemistry at the Aristotle University of Thessaloniki, where she later became a postdoctoral researcher. She has actively participated in European Union–funded projects (Marie Skłodowska-Curie actions and Horizon 2020 programs), during which she enhanced her skills and collaborated with African and European researchers. Her research activities led her to Cyprus, where she trained in Molecular Biology Techniques in collaboration with the Cyprus University of Technology in Limassol. Furthermore, as a member of a three-researcher team, she participated in the National Food Innovation Competition “ECOTROPHELIA Greece 2016,” winning 3rd Prize. She is an active researcher with published studies in international peer-reviewed journals, such as Bioresource Technology, Food Chemistry, Journal of Agricultural and Food Chemistry, Microorganisms, Biochemical Engineering Journal, Sustainability, Waste and Biomass Valorization, Scientia Pharmaceutica, and Applied Sciences. Her work has also been presented at various national and international scientific conferences and symposia, where she participated as a speaker. Her research interests focus on Biotechnology, Microbiology, Pharmaceutical Research, Instrumental Analytical Techniques, Waste Valorization, Enzymatic Activity, Antioxidants, and Predictive Statistical Models. Her employment as a researcher in internationally active Pharmaceutical and Food companies provided her with significant experience in innovative product development. Additionally, she served for a long period as a teaching assistant for undergraduate courses in the Division of Chemical Technology and Industrial Chemistry at the Department of Chemistry of the Aristotle University of Thessaloniki. She currently serves as Academic Head and Lecturer for the Departments of (a) Biomedical Science and (b) Dietetics and Nutrition at New York College Thessaloniki. Furthermore, she is a member of the Reviewer Board for the scientific publisher MDPI and acts as a Guest Reviewer in the peer-review process for various international scientific journals (such as International Journal of Molecular Sciences, Pharmaceuticals, Antibiotics, Molecules, Fermentation, Sustainability, Current Issues in Molecular Biology, Life, Preparative Biochemistry and Biotechnology, among others).
